We started out with a dream that turned into a reality.

The Fiesta Grill started back in 2015 when we decided to chase our dream of owning our own business. One day, we came across an old food truck for sale. It was outdated, beat up, and definitely needed some love. But instead of walking away, we saw potential.

With a lot of hard work, late nights, and early mornings, we fixed it up ourselves. After months of sanding, painting, and rebuilding, that old truck turned into something special — our very own food truck.

We knew from the beginning that we wanted to serve authentic Mexican food made from family recipes that have been passed down for generations. Once we had the menu figured out, we opened up shop and have not looked back since.

We are a proud family-owned business, and everyone from parents to kids helps out wherever possible. It is a true team effort. Thanks to all that love and hard work, we have been able to share a piece of our family’s kitchen with our community here in Colorado Springs.
